Having tasted a true to style Sauv Blanc the other night, we go with a much different variety – a Sauv Blanc/Chardonnay(!) blend – for Christmas Eve. While uncommon, this white works very well when paired with food. The reason for this is that it presents neither the extreme herbacous or bell pepper notes of a Sauvigon Blanc, nor the toasty or rich sensations of a Chardonnay. Something in the middle – green citrus and good acidity – gives us an agreeable, if not exceptional, wine that would, timely as it is, pair with your Christmas Turkey or Ham. Bought at the winery last year for $16, a fair value.
